I was just looking at some of the recipes and noticed that Marikli is not there. Step 1. Sift flour and salt in a bowl. make a well in centre. Add water and mix thoroughly. Step 2. Make into dough and knead until it comes rubbery. Leave for a few minutes. Step 3. Divide dough into balls. spinkle each with olive oil. roll each ball out thinly. Step 4. cook each in a lightly oiled pan. after a few minutes the surface will bubble. Step 5. turn over and cook for another minute until light golden.

Cj is absolutely right I do cook marikli better than him as it is very similar to cooking roti. The closest thing we cook to marikli is a food called puri. When cooking this we use medium brown chapatti flour and mix it with cold water until it is a nice texture. Then roll it into small balls. flatten it within the psalms of our hands. Put it into the dry flour and roll it out to a flat size and then fry.
Where as when cooking roti we use the same technique but cook it on a metal flat plate with a long handle called a 'tuhva'. Once both sides are slightly brown we then cook it off on the open flame. If the roti blows up in a bubble its an old ladies tale that if this occurs it means that somebody is very hungry.

good evening all, today I've been busy at home getting all my house so I haven't got any-thing to distract me in the next few days.
Tonight I've been making a few pans of stew.one for at home and one for my granny's house, they dont eat meat at times like this , and since friday they've been living on chips.
So I am making vegetable stew. I'll put some split peas and pearl barley in it tomorrow.

If I've time in the morning I'll make a few gypsy breads to take to where my grandads place. All my aunts and uncles will be there tommorow, its the day they're bringing his body home and he'll be getting put into his vardo till wedensday.We will be all staying up all night with him until he's burried.
